Mastering Exposure explains in very simplictic examples what exposure is and how to get started in this oftentimes misunderstood (by beginners) subject. By using the exposure triangle (shutter speed, amperture, and ISO) the author carefully guides the reader through each element of the triangle (what each is, how does it operate, and what effect each has on exposure). There are many more excellent and advanced books out there on exposure, but for the beginner this book is worth it's price and is an excellent jumping off point for the beginner. After that, the more advanced books on exposure should be easier to understand.
